Dutch Lettuce / Mess

Ingredients

  • 5 potatoes mashed just like you would for mashed potatoes and gravy for 4 people
  • 4 boiled eggs cooked hard
  • 8 slices bacon cooked just crispy and leave the grease in the pan
  • 4 portions leaf lettuce cleaned and prepared for a salad
  • 3/4 cup green onion sliced
  • 1/4 cup bacon fat what was left from frying the bacon
  • 1/4 cup vinegar
  • 1/3 cup sugar

Instructions

  • Leave grease in the pan from the bacon then add the vinegar and sugar heat to a boil and then set aside
  • Put the onions and lettuce and mashed potatoes, bacon broken up together
  • Pour dressing mixture over the rest of the ingredients
  • Mix and serve

DUTCH MESS
Dressing
Combine well:
½ cup sugar
1 T flour
¼ tsp salt
1 egg
Pinch pepper
Then stir in ½ cup cold water and ½ cup regular vinegar (of course you will use the good kind) Cook in the microwave at 70% power, stirring well every minute until starts to boil. You will need this hot but it can be made ahead and reheated.
Just before pouring over potato mixture, I heat it with some (2-4T) of the bacon grease – optional but sure tastes good.
 
Pour hot dressing over:
At least a cup of lettuce per person
Green Onion chopped, greens & all
Cooked and mashed potatoes, hot
Hard boiled eggs, sliced
Fried and crumbled bacon, hot
 
Mom (Dorothy Ter Louw) would say 1 potato & 1 egg person, but I sometimes do a few extra eggs.
The dressing is about enough for a nice batch for 4 people or so.
I like to start with lettuce, then onions in bottom of bowl and not add hot things until ready to toss and serve.
